My Favorite Zucchini Nut Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
2 c. flour
2 tsp. soda
2 tsp. vanilla
1 c. oil
2 c. raw coarsely grated zucchini
1/4 tsp. baking powder
3 tsp. cinnamon (use less, if desired)
1 c. chopped nuts
Preparation

With a mixer, beat the eggs.
Add sugar, oil and zucchini. Sift the dry ingredients and add.
Mix well.
Add vanilla and nuts.
Pour into 2 oiled and floured 5 x 9-inch loaf pans.
Bake 1 hour at 350\u00b0.
Remove from pans and cool.
These freeze well.
