Apple Or Rhubarb Squares - cooking recipe

Ingredients
    1 3/4 c. sugar
    3 eggs
    2 c. sifted flour
    1 tsp. cinnamon
    1/2 tsp. salt
    1 tsp. baking powder
    1 tsp. vanilla
    1 c. cooking oil
    2 c. thinly sliced apples or rhubarb
Preparation
    Beat eggs; add sugar.
    Beat until mixture is light and fluffy. Add sifted dry ingredients.
    Add oil and vanilla.
    Fold in apples or rhubarb.
    Turn into 9 x 13-inch pan (greased).
    Bake at 350\u00b0 for 40 to 45 minutes.
    Cut into squares.
    (These freeze well.)
