Shredded Yams - cooking recipe

Ingredients
    2 lb. sweet potatoes
    1 gal. water
    1 Tbsp. salt
    1 c. pineapple juice
    1 c. sugar
    1/2 c. dark corn syrup
    1/2 c. water
    1/4 c. margarine
Preparation
    Peel and shred potatoes.
    Soak for several minutes in mixture of 1 gallon water and salt.
    Drain and rinse.
    Place in shallow baking dish.
    Pour pineapple juice over potatoes.
    Mix sugar, syrup and 1/2 cup water in saucepan.
    Cook until thickened, stirring constantly.
    Stir in margarine.
    Add to potatoes.
    Bake at 350\u00b0 for 35 minutes.
    Yield:
    8 servings.
