Homestyle Zucchini Fritters - cooking recipe

Ingredients
    Crisco for deep frying
    1 c. finely chopped zucchini
    1 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. salt
    2 eggs, well beaten
    1/2 c. milk
    2 tsp. Crisco shortening, melted
Preparation
    Wrap chopped zucchini in paper towels to dry.
    Heat 2 or 3 inches of Crisco in deep fryer or heavy skillet.
    Combine flour, baking powder and salt in large bowl.
    Combine eggs, milk and 2 teaspoons of melted shortening in medium bowl.
    Stir in zucchini, add to flour mixture.
    Mix just until moistened.
    Drop by tablespoons into shortening.
    Fry 3 or 4 minutes or until golden brown.
    Turn as needed for even browning.
    Remove; and drain on paper towels.
    Serve immediately.
