Forgotten Stew - cooking recipe

Ingredients
    1 1/2 to 2 lb. lean beef stew meat (no need to brown)
    2 to 4 onions, wedged or sliced
    3 to 4 ribs of celery, chunked
    1 pkg. carrots, cut into chunks
    4 Tbsp. tapioca
    salt and pepper
    1 c. tomato juice
Preparation
    Pour tomato juice over everything.
    Cover with foil.
    Bake in 250\u00b0 oven for 4 to 6 hours.
    Do not peek.
    This makes its own gravy.
    Serve over noodles or mashed potatoes.
