Pineapple-Cheese Boat - cooking recipe

Ingredients
    1 pineapple
    1 c. strawberries, cut in half, reserving 4 whole strawberries
    1 c. cantaloupe balls
    8 oz. cheddar cheese, cubed into 1/2 inch cubes
    1/4 tsp. ground ginger
    2 Tbsp. lime juice
    2 Tbsp. chopped almonds
    pineapple yogurt
Preparation
    Cut pineapple lengthwise into quarters through green top.
    Cut along edges of quarters to remove fruit.
    Cut pineapple core off of fruit, and cut fruit into bite-sized pieces.
    Place pineapple chunks, halved strawberries and melon balls into a large bowl. Sprinkle with ginger and lime juice; toss.
    Stir in cheese.
    Spoon fruit mixture into shells.
    Sprinkle with almonds.
    Spoon yogurt onto each serving, and garnish with whole strawberries.
    Makes 4 servings.
