Sweet Potato Surprise - cooking recipe

6 sweet potatoes, cooked
1 1/4 c. brown sugar
1 1/2 Tbsp. cornstarch
1 tsp. grated orange rind
1/8 tsp. cinnamon
1 c. apricot juice
1 c. drained apricots
2 Tbsp. butter
1/2 c. chopped pecans
Preparation

Cut cooked sweet potatoes in halves and arrange on buttered 7 1/2 x 12-inch baking dish.
Combine sugar, cornstarch, orange rind, cinnamon and apricot juice in saucepan and cook until thick. Stirring constantly.
Stir in apricots, butter and pecans.
Pour over sweet potatoes.
Bake in moderate oven (375\u00b0) for 25 minutes. Makes 6 to 8 servings.
