Grandpa'S Sauerbraten - cooking recipe

Ingredients
    4 lb. beef
    1 pt. vinegar
    5 carrots, cut into strips
    4 cloves
    12 peppercorns
    4 bay leaves
    12 gingersnap cookies
    6 onions, sliced
    1 Tbsp. sugar
    1 Tbsp. salt
Preparation
    Sprinkle beef with salt and pepper.
    Place in an earthen dish (do not use metal).
    Add bay leaves, peppercorns, cloves, vinegar and enough water to cover.
    Let stand 5 days in refrigerator. Turn daily.
    Brown meat and add 2 cups of the spiced vinegar mixture, carrots and onions.
    Cover and cook on stove until tender, about 3 hours.
    For gravy, dissolve gingersnaps in water and use to thicken mixture.
    Serve with red cabbage.
