Ingredients

2 eggs
1 c. persimmon pulp
1 c. milk
1/2 c. sugar
1 c. flour
1/8 tsp. salt
small lump butter
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 c. pecans
whipped cream
Preparation

Beat egg white until stiff; beat yolks and add together. Continue beating.
Add persimmons, milk, sugar, flour, salt, butter, baking powder and soda.
Beat slightly.
Add spices and nuts.
Bake in a 9-inch square pan or rectangular.
Bake at 350\u00b0 for 40 minutes or until a knife blade comes out clean.
Top with whipped cream when cool.
