Rice Pudding - cooking recipe

Ingredients
    1 1/2 c. cooked rice
    2 c. milk
    2 eggs
    1/3 c. sugar
    pinch of salt
    1 tsp. vanilla
    1/4 to 1/2 c. raisins
Preparation
    Cook rice and milk gently in 3-quart saucepan, stirring occasionally until mixture is creamy (about 5 minutes). Meanwhile, combine eggs, sugar, salt and vanilla, slowly stirring rice mixture into egg mixture.
    In processor, stir in raisins (optional).
    Pour into a greased 1 1/2-quart casserole dish. Sprinkle with cinnamon, if desired.
    Place in pan containing 1-inch of hot water.
    Bake at 350\u00b0 for 45 to 50 minutes.
    Serves 5 to 6.
