Ingredients
    1/4 c. pine nuts
    1/4 c. butter or margarine
    1 onion, chopped
    1 c. white long-grain rice
    1 3/4 c. chicken broth
    1/2 c. dried apricots, chopped
    2 Tbsp. butter (optional)
Preparation
    In a large heavy saucepan, brown pine nuts in butter over medium heat.
    With slotted spoon, remove nuts and reserve.
