Spinach Timbale - cooking recipe

Ingredients
    1/2 c. whole wheat bread crumbs
    2 lb. fresh spinach
    1 Tbsp. butter or safflower oil
    1/2 onion, chopped fine
    1 clove garlic, minced
    3/4 c. grated Gruyere cheese
    1/2 c. grated Parmesan cheese
    sea salt and pepper
    4 eggs, beaten
    1 c. milk
    pinch of nutmeg
Preparation
    Preheat oven to 325\u00b0.
    Butter a souffle dish and dust with 1/4 of bread crumbs.
    Wash spinach and remove stems. Wilt in a dry frying pan.
    Rinse under cold water; squeeze dry in a towel. Chop fine.
