"I Remember" Floating Island - cooking recipe

Ingredients
    4 egg whites
    2/3 c. sugar
Preparation
    Get a pot of boiling water, then turn down the heat so that water is just under boil, not bubbling at all.
    Separate eggs and whip egg whites until very stiff, but not dry.
    In other words, the beaten whites will slide around the bowl.
    At this point begin to beat in the sugar very gradually and continue beating until whites stand in peaks.
    Now, using a tablespoon that has been dipped in cold water, drop the mixture, one tablespoonful at a time, into the pot of water and poach each island for a few minutes, first on one side and then the other.
    Don't crowd!
    When poached, lift each one from pan with a spoon and place on paper toweling to dry and cool.
