Chicken Luau - cooking recipe

Ingredients
    4 lb. chicken
    2 Tbsp. oil
    2 cloves garlic, minced
    3 c. chicken broth
    2 Tbsp. cornstarch
    1/4 c. cold water
    2 pkg. frozen spinach, chopped
    1 (14 oz.) can coconut milk
Preparation
    Cut chicken into serving pieces.
    Heat oil in skillet and brown.
    Stir in garlic and add broth.
    Simmer 1 1/2 hours, until chicken is tender.
    Place in casserole dish and keep warm in oven. Bring broth to a boil and reduce to 2 cups.
    Blend cornstarch and water to make paste; stir into broth and cook.
    Stir frequently until thick.
    Drain spinach and stir spinach and coconut milk into chicken broth.
    Season with salt and pepper to taste.
    Pour over chicken and serve.
    Serves 8.
