Cranberry Orange Muffins - cooking recipe

2 c. self-rising flour
1/2 c. sugar
1 tsp. grated orange rind
1 egg
1/4 c. freshly-squeezed orange juice
3/4 c. milk
1/3 c. oil
1 c. chopped fresh cranberries
1/2 c. chopped pecans
Preparation

Preheat oven to 400 degrees. Grease a muffin tin.
In a large bowl, combine flour, sugar, and orange rind.
Stir to mix.
In a medium bowl, combine egg, orange juice, milk and oil.
Mix well. Add to the flour mixture. Mix just until the dry ingredients are moistened.
Stir in cranberries and pecans.
Spoon into muffin cups, filling about 2/3 full.
Bake for about 20 minutes or until a toothpick inserted into center of muffin comes out clean. Remove from pan immediately.
Makes 12 muffins.
