Caper-Mustard Marinade - cooking recipe

Ingredients
    2 Tbsp. tarragon vinegar
    1 Tbsp. plus 1 tsp. olive oil
    1 Tbsp. drained capers
    2 tsp. Dijon mustard
    2 tsp. sweet pickle relish
    1/8 tsp. salt
    freshly ground pepper to taste
Preparation
    Combine all ingredients in small screw-top jar.
    Shake to mix well.
    Use at once or refrigerate up to 1 week.
    Use to marinate poultry or fish 1 to 2 hours before grilling.
    Brush any remaining marinade over poultry or fish while grilling.
    Serves 4.
