Sweet Crisp Green Tomato Pickles - cooking recipe
Ingredients

8 lb. green tomatoes
2 c. lime
2 gal. water
9 c. sugar
5 to 8 c. apple cider vinegar
1 Tbsp. salt
10 drops green food coloring
Preparation

Cut tomatoes into 1/2-inch slices.
Mix lime and water and cover tomatoes.
Let stand 24 hours.
Rinse well and soak in cold water for 2 hours.
Mix sugar, vinegar, salt and food coloring. Drain tomatoes and add to sugar and vinegar.
Soak tomatoes in mixture overnight.
Bring to boil and boil for 40 minutes.
Pack in clean, hot jars and seal.
Makes 8 pints.
