Broccoli Topped Potatoes - cooking recipe

Ingredients
    baked potatoes
    3 Tbsp. oil
    3 Tbsp. plain flour
    1/4 tsp. pepper
    2 c. skim milk
    6 to 8 oz. cheese, shredded
    1 pkg. frozen broccoli (16 oz.), cooked and drained
Preparation
    Blend and heat oil, flour and pepper in saucepan until smooth. Stir in milk gradually.
    Cook and stir on medium to medium-high heat until mixture comes to a boil and is slightly thickened and smooth.
    Remove from heat.
    Stir in cheese until melted.
    Stir in vegetables.
    (Reheat on low, if necessary.)
    Cut open potatoes. Top with sauce.
    Enough for 8 potatoes.
