Smith'S Beefeater Spinach Salad - cooking recipe

Ingredients
    1 qt. coarsely chopped spinach
    1/2 c. chopped celery
    6 Tbsp. finely chopped onion
    3/4 c. Old English cheese, cut into 1/4-inch pieces
    3 hard-cooked eggs, grated
    3 hard-cooked eggs, chopped
    1/2 tsp. salt
    1/2 tsp. Tabasco
    1 1/2 tsp. vinegar
    1 c. mayonnaise
Preparation
    Wash spinach several times. Combine celery, onion, eggs and cheese. Mix with spinach. Mix well. Fold mayonnaise gently into vegetables. Garnish with grated egg. May serve with horseradish on the side.
