Baked Eggplant - cooking recipe
Ingredients

1 large eggplant
1/2 c. mayonnaise
1/4 tsp. salt
1/4 c. finely chopped onion
1/3 c. seasoned bread crumbs or plain
1/3 c. grated Parmesan cheese
1/2 tsp. Italian seasoning
Preparation

Slice eggplant crosswise into 1/2 inch slices.
Combine mayonnaise, salt and onion.
Set aside.
Combine bread crumbs, Parmesan cheese and Italian seasoning.
Spread both sides of eggplant slices with mayonnaise mixture, then coat with bread crumb mixture.
Place on baking sheet.
Bake at 425\u00b0 for 15 to 17 minutes or until golden brown.
