Cousin Mary'S Lemon Squares - cooking recipe

Ingredients

1 c. flour *
1/2 c. butter
1/4 c. confectioners sugar
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. lemon juice

Preparation

Heat oven to 350\u00b0.
Mix thoroughly the first three ingredients.
Press evenly in bottom of ungreased square pan, 8 x 8 x 2-inches or 9 x 9 x 2-inches.
Bake 20 minutes.
Beat remaining ingredients about 3 minutes or until
light and fluffy. Pour over hot crust.
Bake about 25 minutes longer.
Cool; cut into squares.
Yields 16 cookies.
