Shrimp, Crab, Oyster And Sausage Gumbo - cooking recipe

Ingredients
    12 oz. butter
    12 oz. oil
    24 oz. flour
    1/2 lb. chopped bell pepper
    1/2 lb. celery, chopped
    5 Tbsp. minced garlic
    1 lb. onion, chopped
    2 c. tomato puree
    3 lb. shrimp
    1 lb. crabmeat
    3 lb. sliced firm sausage, smoked
    2 gal. water
    5 Tbsp. thyme
    3 Tbsp. basil
    1 Tbsp. salt
    1 Tbsp. black pepper
    1 tsp. cayenne pepper
    1/2 oz. Tabasco
    2 lemons, sliced thin
    1/2 gal. oysters
    2 bunches green onions, chopped
    1/2 bunch parsley, chopped
Preparation
    Heat oil and butter to smoke.
    Add flour; stir to dark red brown.
    Add vegetables and garlic.
    Add tomato puree; cook for 10 minutes.
    Add water and seasonings; simmer for 45 minutes to 1 hour.
    Chop sausage; saute in large pan.
    When brown, pour off grease.
    Add shrimp.
    When they turn pink, add green onions and parsley.
    Now, add this to the big pot that has been simmering. Add crabmeat and oyster water.
    Adjust seasoning.
    Add oysters to the hot Gumbo at the last minute.
    Serve over hot, boiled rice. Makes 2 gallons.
