Zucchini And Cheese Casserole - cooking recipe

Ingredients
    3 or 4 medium zucchini squash
    1 c. American cheese
    1 tsp. salt
    1/2 tsp. black pepper
    2 or 3 Tbsp. margarine
    1/2 c. or more crushed crackers (Club)
    chopped onion (if desired)
Preparation
    Wash and cut the zucchini into 1/2-inch cubes. Put into a saucepan and cover with water. Cook 6 to 8 minutes or until tender. Drain. Put back into saucepan. Add the cheese, salt, pepper and margarine. Stir lightly until cheese melts. Pour into a greased baking dish and sprinkle the Club cracker crumbs over the top. Bake at 400\u00b0 for 12 to 15 minutes or until lightly browned.
