Three Onion Relish - cooking recipe

Ingredients
    1/2 c. thin sliced red onion
    1/2 c. thin sliced Vidalia onion
    4 large green onions, white and light green parts only, sliced diagonally
    1 tsp. salt
    2 Tbsp. white wine vinegar
    2 tsp. sugar or honey
    1/2 tsp. grated orange peel
    pinch of dried thyme, crumbled
Preparation
    Toss onions with salt in large bowl.
    Transfer to colander in sink and let sit 30 minutes.
    Rinse in cold water and squeeze dry. Transfer to nonaluminum bowl.
    Add vinegar, sugar, peel and thyme.
    Cover and refrigerate 1 hour before serving.
