Bitter And Sweet Salad - cooking recipe

Ingredients
    4 c. torn mixed arugula, endive and radicchio
    3 cloves garlic
    1/4 c. brown sugar
    1/2 to 3/4 c. olive oil
    1/4 c. balsamic vinegar
    1/4 c. red wine vinegar
    1 can pitted black olives
    4 green onions, sliced
    1/4 lb. Prosciutto
    1/4 lb. Parmesan cheese, curled
    salt and pepper to taste
Preparation
    Arrange greens in a shallow bowl.
    Top with olives, onions, Prosciutto and cheese.
    In a saucepan, roast garlic in the olive oil over a low heat.
    Add sugar, then vinegars.
    Pour over the salad while still warm.
