Bread Pudding(Diabetic) - cooking recipe

Ingredients
    1 c. dry bread cubes
    1 1/2 c. skim milk, scalded
    2 tsp. Sweet 'N Low (8 packets)
    1/2 tsp. cinnamon
    2 Tbsp. raisins
    1 tsp. vanilla
    2 eggs, lightly beaten
Preparation
    Soak bread cubes in scalded milk for 5 minutes; add sugar substitute, cinnamon and raisins.
    Pour bread mixture slowly over beaten eggs.
    Add vanilla and blend well.
    Pour into a greased baking dish; bake in a slow 325\u00b0 oven about 50 minutes, until firm.
    Makes 4 servings.
