Ricotta Pie(Southern Italy) - cooking recipe

Ingredients
    8 eggs
    3 lb. Ricotta cheese
    3/4 c. sugar
    2 tsp. vanilla or almond extract
    juice from 1 orange
    grated peel from 1 orange
    juice from 1 lemon
    grated peel from 1 lemon
    2 unbaked pie shells
Preparation
    Whip eggs, Ricotta, sugar and vanilla.
    Add orange and lemon juice, grated orange and lemon peel.
    Blend well.
