Hospitality Chicken Soup - cooking recipe

Ingredients
    5 to 7 lb. chicken, cut up and cleaned (keep skin on!)
    1 large onion, scored
    1/2 bunch parsley
    1/2 bunch dill
    1/2 parsley root (optional)
    6 carrots
    top celery stalk
    salt to taste
Preparation
    After cleaning chicken, put in a 6-quart pot filled with 4 to 5 quarts of water.
    Let it come to a boil and skim off scum (the discolored foam that rises to the top).
    When soup looks clear, add all other ingredients.
    Let it come to a boil, then lower. Cover with venting and let simmer until chicken falls off the bone.
    Strain and serve.
