Peanut Butter Vegetable Soup(A Colorful Vegetable Soup) - cooking recipe

Ingredients
    3 Tbsp. peanut oil
    1 c. celery, sliced
    1 c. carrots, sliced
    1/2 c. onion, chopped
    1 red pepper, cut into strips
    2 Tbsp. flour
    4 c. chicken broth
    1 c. peanut butter, creamy
    2 tomatoes, seeded and chopped
    1 c. milk
    3 Tbsp. sherry
    2 tsp. lemon juice
    salt and pepper to taste
    3 Tbsp. peanuts, roasted and chopped
Preparation
    In large saucepan heat oil.
    Add celery, carrots, onion and red pepper; saute until tender.
    Stir in flour.
    Gradually add chicken
    broth,
    stirring
    until smooth.
    Bring to a boil. Stir in peanut butter until smooth;
    simmer 15 minutes.
    Stir in tomatoes,
    milk,
    sherry
    and
    lemon juice.
    Heat through. Season with salt and pepper.
    Garnish with chopped peanuts, as desired. Yields 7 servings.
