Canadian Cheese Soup - cooking recipe
Ingredients

1/2 c. finely chopped onions
1/4 c. butter or margarine
1/2 c. all-purpose flour
4 c. milk
4 c. chicken broth
1/2 c. finely chopped carrots
1/2 c. finely chopped celery
2 c. diced sharp American cheese
dash of salt and pepper
Preparation

Cook onions in butter until tender but not brown.
Blend in flour; slowly add hot broth, stirring constantly.
Add milk, carrots, celery, salt and pepper.
Cook and stir over medium heat until mixture thickens and is bubbly.
Reduce heat; add cheese. Stir to melt cheese.
Simmer 15 minutes.
Yields 8 one-cup servings.
