Zucchini Casserole - cooking recipe

Ingredients
    3 over-sized zucchini
    1 small onion, chopped
    4 large eggs
    1 c. Bisquick
    1/2 c. oil
    1/2 c. shredded sharp Cheddar cheese
    salt and pepper to taste
Preparation
    Mix eggs and oil in large mixing bowl; add salt and pepper. Add zucchini and onion; mix.
    Make sure vegetables are covered well, then add cheese.
    Gently toss again.
    Pour into 2 1/2-quart casserole, well buttered.
    Pat top with butter.
    Bake at 400\u00b0 for 30 minutes, then reduce heat to 350\u00b0 for 20 minutes.
