Ingredients

2 c. self-rising flour
2 eggs
2 c. milk
1/4 c. vegetable oil
Preparation

Sift flour. Combine with eggs and oil. Gradually add milk while stirring. Batter should be a little thick. More milk or flour may be added to reach desired consistency. Pour by 1/4 cup onto hot griddle or nonstick skillet. Flip each cake only once when edges look done. Serve hot with your favorite syrup or fruit.
