Sweet Potato Surprise - cooking recipe
Ingredients

1 large can sweet potatoes
1 1/4 c. brown sugar
3 Tbsp. cornstarch
1/8 tsp. cinnamon
1 c. apricot juice
1 can drained apricots
2 Tbsp. butter
1/2 c. chopped pecans (optional)
Preparation

Arrange sweet potatoes in buttered baking dish. Combine sugar, cornstarch, cinnamon and apricot juice in saucepan.
Cook until thick, stirring constantly. Stir in apricots, butter and pecans. Pour over sweet potatoes. Bake in moderate oven at 375\u00b0 for 30 minutes.
