Chicken-Amaretto Curry - cooking recipe
Ingredients

2 lb. boneless chicken, diced
2 Tbsp. margarine
1/2 c. Amaretto
3 Tbsp. lemon juice
1 tsp. grated lemon rind
3/4 lb. mushrooms, sliced
1 c. chicken broth
1/3 c. flour
1 Tbsp. cornstarch
2 tsp. curry powder
1/4 tsp. white pepper
1/4 tsp. salt
Preparation

Heat butter in a large skillet. Brown chicken on all sides. Add mushrooms, lemon and Amaretto. Simmer 5 minutes. Add remaining ingredients. Cook, stirring over low heat until thickened. Serve over rice with pea pods and tomatoes. Serves 6.
