Barley And Green Pea Salad - cooking recipe

Ingredients
    3 c. water
    3 vegetable bouillon cubes
    1 c. pearl barley
    1/4 c. vegetable oil
    3 Tbsp. vinegar
    1 clove garlic
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    1 (10 oz.) pkg. frozen green peas
    2/3 c. chopped bell pepper
    2/3 c. diced cucumber
    1 Tbsp. minced scallion
    6 hard-cooked eggs
    2/3 c. plain low-fat yogurt
    1/3 c. mayo
Preparation
    In a 3-quart saucepan, bring water and bouillon to boil over high heat.
    Stir in barley.
    Cover; reduce heat to low.
    Simmer 40 to 45 minutes until water is absorbed and barley is tender but firm.
