Vegetarian Vegetable Soup - cooking recipe
Ingredients

1 tsp. olive oil
1 medium onion, chopped
3 stalks celery, cut lengthwise
1 medium bell pepper, chopped
4 c. water
4 bouillon cubes
2 (16 oz.) cans diced tomatoes
3 medium potatoes, cut into large chunks
spices to taste: salt, pepper, basil, thyme, bay leaf, coriander, oregano and garlic powder
Preparation

Saute the onion, celery and bell pepper in the olive oil in a large Dutch oven.
Add the other ingredients and simmer until softened.
Makes 6 servings.
