Belizean Rice And Beans - cooking recipe

Ingredients
    1 c. red kidney beans
    1 fresh coconut in shell
    1/2 tsp. salt
    1/4 tsp. cayenne pepper
    2 c. long grain rice
    1 medium onion, chopped
    1/2 tsp. thyme
Preparation
    Cook beans in water until tender.
    Remove coconut from shell; rinse and grate.
    Pour 1 1/2 cups warm water over grated coconut; mix and squeeze juice through sieve.
    Repeat with 1 1/2 cups warm water.
    Add milk and rice into 2 to 3-quart-sized pot.
    Add all other ingredients.
    Bring to boil and let simmer for about 1/2 hour.
    Stir.
    Cover and leave on turned-off stove for about 10 minutes.
    Serves 4.
