White Chocolate Mousse With Kiwi And Strawberry Slices - cooking recipe

Ingredients
    1/2 c. sugar
    4 egg whites
    2 c. whipping cream
    1/4 c. water
    1 lb. white chocolate (chips or chopped bar)
    kiwi fruit and strawberries
    1/4 c. minced pistachio nuts
Preparation
    Combine sugar and water in small, heavy saucepan.
    Bring to boil, stirring just until dissolved.
    Boil gently until it reaches 225\u00b0 on candy thermometer.
    Remove from heat.
    Set aside while beating egg whites.
    Beat egg whites until soft peaks form.
    With mixer at low speed, add sugar syrup in slow, steady stream.
    Beat 30 seconds, or until fluffy.
    Melt chocolate at 50% power in microwave.
    Add to mixture and continue beating.
    Set aside.
    Whip the cream until stiff.
    Fold into chocolate mixture.
    Pour into serving dishes.
    Chill.
    Before serving, decorate top with sliced kiwi and strawberries.
    Sprinkle with nuts, if desired.
