Hunter'S Stew - cooking recipe

Ingredients
    1/4 c. oil
    1 lb. beef, cut in small cubes
    flour
    1 large onion, chopped
    1/2 lb. sliced mushrooms
    2 to 4 c. beef stock
    4 medium potatoes
    2 large carrots
    salt and pepper
    1 Tbsp. chopped parsley
Preparation
    Heat oil in Dutch oven.
    Dredge meat in flour and brown in oil.
    Add onion and mushrooms.
    Cook until onion browns.
    Drain if necessary and return to pot.
    Add 2 cups of beef stock, salt and pepper.
    Simmer for 1 1/2 to 2 hours, stirring occasionally and add beef stock as necessary until meat is tender.
    Peel potatoes and cut into small cubes.
    Peel and shred carrots.
    Add to meat. Continue to cook until vegetables are done.
    Garnish with parsley.
