Pineapple-Pear Preserves - cooking recipe

Ingredients
    2 gal. pears (after cleaning, peeling and slicing)
    1 (20 oz.) can crushed pineapple
    4 large lemons, washed
    sugar
    Fruit Fresh
Preparation
    Keep pears in water with Fruit Fresh while preparing them. Rinse and drain.
    Put in a large enameled pan or pot; add more Fruit Fresh and sugar to coat all slices thickly.
    Slice all lemons very thin; seed, then add to pears.
    Add crushed pineapple. Soak this mixture overnight.
    Next morning, cook over medium heat until pears are beginning to \"clear\" at thick part and are barely fork-tender.
    While cooking, may sprinkle with cinnamon if desired, to taste.
    Cook about 1 1/2 to 2 hours.
    Jar in hot jars and with hot seals.
    Should yield 8 to 10 pints.
