Chicken Salad - cooking recipe
Ingredients

2 c. cooked, cubed chicken
1 c. fresh cantaloupe cubes
1/2 c. celery, diced
1/3 c. cashew nuts
1/4 c. scallions, sliced
1 c. yogurt
1/2 tsp. ginger
iceberg lettuce leaves
Preparation

Combine chicken, melon, celery, cashews and scallions.
Add ginger to yogurt.
Pour yogurt over mixture and mix well.
Serve on a bed of lettuce.
Serves 4.
