Ingredients

1 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 tsp. vanilla
1/2 c. quick rolled oats
1 c. finely chopped apple
2 c. ground coconut
Preparation

Sift flour, baking powder, soda and salt. Set aside.
In a large bowl of mixer cream butter.
Add sugars and beat until light and fluffy.
Blend in egg and vanilla.
Blend in dry ingredients, then oats, chopped apple and 1 1/3 cup of the coconut.
Combine well.
Then drop by 1/4 cup portions onto ungreased cookie sheets. Flatten slightly.
Sprinkle with coconut.
Bake at 375\u00b0 for 15 minutes or until golden.
Cool 2 minutes on sheet, then transfer to wire rack.
Makes 14 to 15 cookies.
You can also just press dough in greased 9 x 13-inch pan.
Bake 25 to 30 minutes.
Cool and cut into squares.
