Ingredients

3 c. grated zucchini
3 eggs, well beaten
1/3 c. flour
1/4 tsp. salt
2 c. grated Mozzarella
1 c. sliced black olives
2/3 c. minced green onions
1/2 c. minced green pepper
1 tsp. dried oregano
1/2 tsp. dried basil
3 medium tomatoes, thinly sliced
Preparation

Press excess liquid from zucchini.
Transfer to mixing bowl and stir in eggs, flour and salt.
Spread evenly over bottom of well-greased 13 x 9-inch baking pan.
Bake at 450\u00b0 for 8 minutes. Remove from oven; cool.
Reduce oven to 350\u00b0.
Sprinkle zucchini with cheese. Mix olives, onions and peppers.
Sprinkle evenly over cheese.
Sprinkle with oregano and basil.
Arrange tomato slices over top and sprinkle lightly with salt.
Bake 20 minutes or until cheese is bubbly and zucchini is set.
Cool on wire rack 5 minutes.
