Meat Loaf(Diabetic) - cooking recipe

Ingredients
    3/4 c. coarse bread crumbs (fresh bread)
    2/3 c. tomato juice
    2 lb. ground round (very lean)
    1/2 c. chopped onions
    1 tsp. seasoning salt
    1 tsp. Italian seasoning salt
    1/8 tsp. garlic powder
Preparation
    Soak the bread crumbs in the tomato juice a few minutes, then mix all the ingredients together with your hands.
    Shape into a cylinder 4 inches in diameter (so you can judge you meat exchange).
    Put into a baking dish and bake at 350\u00b0 about 1 hour and 15 minutes.
    When you are ready to serve, mark with a knife in the center.
    Then make another mark in the middle of each half and then another in each quarter.
    One of these slices equals 1/8.
