Roux - Fat Free Roux - cooking recipe

Ingredients
    1 c. oil or grease
    1 full c. flour
Preparation
    Place a
    cast
    iron skillet, containing 1 inch of flour in a 400\u00b0 oven until dark brown, stirring occasionally with a wooden spoon.
    Use 1/2 as much fat as flour.
    Melt fat or heat oil.
    Add flour
    and\tstir
    over
    medium
    heat
    until desired darkness occurs.
    We
    like
    ours dark, some people like theirs medium dark.
