Lemon Pecan Fruitcake - cooking recipe
Ingredients

2 1/2 c. sugar
1 c. mayonnaise
6 eggs
4 c. flour
1/2 tsp. baking powder
2 oz. lemon extract
4 c. pecans
1/4 lb. candied pineapple, chopped
1/2 lb. candied cherries, chopped
1/4 lb. raisins (optional)
Preparation

Cream together sugar and mayonnaise until smooth.
Add eggs, one at a time, beating well after each one.
Sift baking powder and flour.
Add to creamed mixture, small amount at a time.
Add extract, chopped fruit and pecans.
Put in well-greased and floured pan or 2 loaf pans.
Bake in 300\u00b0 oven for 1 hour or until cake tests done.
