Stuffed Potatoes - cooking recipe

Ingredients
    5 baked potatoes (hot from oven)
    1 c. plain yogurt
    1 c. grated Cheddar cheese
    3 Tbsp. butter
    2 Tbsp. milk
    2 Tbsp. finely minced onion
    1/2 tsp. salt or less
    dash of pepper
    1/2 c. cooked, diced bacon (optional)
    paprika and/or parsley for garnish
Preparation
    Carefully cut potatoes in half lengthwise and scoop out pulp. Reserve skin shells.
    Beat potatoes together with yogurt, cheese, butter, milk, onion, seasonings and optional bacon (an electric beater works well).
    Stuff the skin shells with the potato mixture and reheat in a 400\u00b0 oven for 15 minutes.
