Minted Chicken Soup - cooking recipe

Ingredients
    1 Tbsp. margarine
    2 Tbsp. flour
    5 c. chicken broth
    1 tsp. grated lemon rind
    2 Tbsp. lemon juice
    1 c. cubed, cooked chicken
    2 Tbsp. minced fresh mint
Preparation
    In a large heavy saucepan, melt the margarine over moderate heat, then blend in the flour and cook, stirring for 4 minutes. Slowly whisk in the chicken broth, the lemon rind and lemon juice and heat, stirring constantly, just to the boiling point (about 5 minutes).
    Adjust the heat so that the mixture simmers and cook, stirring occasionally, for 5 minutes.
    Add the chicken and cook 1 minute more over low heat.
    Stir in the mint.
    Serves 4. Preparation:
    approximately 10 minutes.
    Cooking time: 16 minutes.
