Stuffed Artichokes - cooking recipe

Ingredients
    1/2 c. virgin olive oil
    2 large cloves garlic, chopped fine
    1 large shallot, chopped fine
    1 medium onion, chopped fine
    1 c. fresh chopped parsley
    1 c. sliced celery
    3 c. Italian bread crumbs
    1/2 c. Parmesan cheese, freshly grated
    1/4 c. Romano cheese, freshly grated
    1/4 tsp. fresh ground pepper
    salt to taste
    1 c. white cooking wine
    4 large artichokes
Preparation
    Add olive oil to large heated pan.
    Add garlic, shallot, onion, parsley and celery.
    Saute until celery is almost tender.
    Remove from heat.
    Add bread crumbs, Parmesan cheese, Romano cheese, pepper and salt.
    Mix. Olive oil may be added if too dry.
