Potatoes Basquaise - cooking recipe

Ingredients
    6 medium potatoes
    salt
    6 slices bacon, diced
    1/4 tsp. black pepper
    1 c. finely chopped onion
    1/4 c. chopped parsley
    8 eggs
    1/4 tsp. paprika
Preparation
    Peel potatoes; rinse.
    Place in 3-quart saucepan.
    Cover with water.
    Add 1 teaspoon salt.
    Bring water to a boil.
    Cover and reduce heat.
    Simmer for 20 minutes until almost tender.
    Drain. Cut in 1/8-inch slices.
